Anyone know if it is possible to convert a 122 2door to a single drive shaft? If so, what all is involved?

Yes, possible, but much work and money involved.

The distance between the trans (or OD) output shaft and the diff flange changes constantly as the car traverses bumps and turns. That is why the existing shaft is two pieces with a slipping spline joining the front shaft to the back.

A single drive shaft would need to accommodate this distance change while smoothly transmitting the torque to the diff. Even if you moved the spline to one end of the one-piece shaft it (the spline) would need to be stabilized and designed to allow distance changes.
